Every green tea, whether it tastes of chestnuts, grass or seaweed, has been through the same three core operations in some form: fixation to halt oxidation, rolling to shape the leaf and begin extracting, and drying to stabilize. The differences between Dragon Well, sencha and gunpowder come almost entirely from how those three operations are executed. This page walks through them in order.
The Three Core Steps
Fixation is the killing-green step. In pan-firing, the leaf goes into a heated pan at roughly 150–200 °C and is tossed and pressed until its enzymes are deactivated — typically less than a minute. In steaming, the leaf is exposed to steam jets for 20–60 seconds.

Pan-Firing: The Chinese Tradition
Rolling comes next. The leaf is rolled under pressure to break cell walls and shape the final form: flat strips for Longjing, tight spirals for Biluochun, needle shapes for Japanese gyokuro, pellets for gunpowder.

Drying is the slow step. Pan-fired teas get a low-temperature finish; steamed teas are dried in stages. The moisture target is roughly 5 % or less for stable storage.

Fixation: The Step That Defines Green Tea
Fixation — shaqing, "killing the green" — is the moment green tea becomes green tea. Heat deactivates polyphenol oxidase, the enzyme that would otherwise convert catechins into the darker compounds found in black tea. Everything distinctive about green tea follows from stopping that reaction early.
Two methods dominate, and they produce recognizably different teas:
- Pan-firing — leaf is tossed in a wok at roughly 180–220 °C (356–428 °F) for several minutes. Chinese green teas almost all use this. It produces a nuttier, toastier profile and a slightly yellow-green liquor.
- Steaming — leaf is steamed for 30–60 seconds. Japanese teas use this. It preserves more chlorophyll and more vitamin C, giving a deeper green color, a vegetal or marine aroma, and a sweeter, more umami-driven cup.
Faults. Under-fixing leaves the enzymes active, producing red edges in the leaf and a sour, unstable tea that changes within weeks. Over-fixing scorches the leaf and destroys aroma. Both are irreversible, which is why fixation is the most closely watched step in the workshop.
Rolling and Shaping
After fixation the leaf is rolled, partly to shape it and partly to break some cell walls so the tea releases in the cup. Rolling is where most of the famous green tea shapes are created: the flat sword shape of Longjing, the tight snail of Biluochun, the needle of some bud grades, the twisted strip of most everyday teas.
Shaping is not purely cosmetic. A tightly rolled tea releases more slowly and survives more infusions; a flat or unrolled tea releases fast and is better for a single long steep. This is why brewing parameters should follow the shape as well as the category.
Drying and Finishing
Final drying brings moisture down to roughly 5–6 %, which is low enough for storage and high enough that the leaf is not brittle. Traditional production uses charcoal baskets in several passes with resting between them; modern production uses mechanical dryers, which are faster and more consistent but can produce a flat or slightly baked note if run too hot.
The last consideration is sorting: dust, broken leaf and stem are removed, and the tea is graded. For most Chinese green teas, grading is done by appearance — bud proportion, uniformity and leaf integrity — which is why a tea can look superb and taste ordinary.
