What is Longjing Tea?
Longjing tea (龙井茶), also known as Dragon Well tea, is China’s most famous green tea. Grown in the hills surrounding West Lake in Hangzhou, Zhejiang Province, this premium pan-fired green tea has been prized by emperors and tea connoisseurs for over a thousand years.

The Legend of Dragon Well
According to legend, the name “Dragon Well” comes from a dragon that lived in a spring near the tea gardens. During a severe drought in the Southern Song Dynasty, a monk prayed at the spring, and rain fell, saving the crops. The spring was named “Dragon Well” (Longjing), and the tea that grew around it took the same name.

The Four Grades of Longjing
Longjing tea is classified into four traditional grades, each with distinct characteristics:

How to Brew Longjing Tea
The ideal brewing method for Longjing uses a tall glass to showcase the beautiful leaves. Use water at 75-80°C (167-176°F) and steep for 3-4 minutes.
Never use boiling water for Longjing! Water above 85°C will scorch the delicate leaves and release bitter tannins. For best results, let boiled water cool for 3-5 minutes before pouring. Use 3g of tea per 250ml of water for the perfect balance.
