ISO Tea Standards: International Quality and Testing Standards
The International Organization for Standardization (ISO), through its Technical Committee ISO/TC 34/SC 8 (Tea), develops and maintains international standards for tea. These standards facilitate global trade by establishing common specifications, testing methods, and terminology recognized by tea-producing and tea-consuming countries worldwide.
ISO/TC 34/SC 8 - The Tea Standards Committee
ISO Technical Committee 34 (Food products), Subcommittee 8 (Tea) is the body responsible for all international tea standards. Founded in 1954, it includes representatives from major tea-producing and tea-consuming nations including China, India, Sri Lanka, Kenya, Japan, the UK, Germany, and the US.
The committee’s mission includes standardizing tea terminology, establishing quality and safety specifications, developing standardized testing and sampling methods, promoting uniformity in tea grading, and facilitating international tea trade through mutual recognition of standards.
Core ISO Tea Standards
ISO 3720: Black Tea - Definition and Basic Requirements
The foundational international standard for black tea, first published in 1977. Defines what constitutes black tea in international trade and sets minimum quality requirements: moisture ≤ 7% m/m, water extract ≥ 32% m/m, total ash ≤ 8% m/m, water-soluble ash ≥ 45% of total ash, alkalinity of water-soluble ash ≥ 1% (as KOH), insoluble ash in acid ≤ 1% m/m, crude fiber ≤ 16.5% m/m, theaflavins ≥ 0.6% for good quality black tea.
Important: ISO 3720 sets MINIMUM standards - premium teas typically exceed these significantly. Teas failing ISO 3720 cannot be legally sold as “black tea” in many countries.
ISO 11287: Green Tea - Definition and Basic Requirements
International standard for green tea with minimum quality parameters: moisture ≤ 7% m/m, water extract ≥ 34% m/m, total ash ≤ 8% m/m, water-soluble ash ≥ 45% of total ash, polyphenol content ≥ 10%, crude fiber ≤ 16% m/m.
ISO 3103: Tea - Preparation of Liquor for Sensory Testing
Perhaps the most practical ISO standard for tea professionals, specifying the standard method for brewing tea for sensory evaluation. Standard brewing parameters: 2.0g tea (±0.01g), 100ml water (±1ml), 100°C for black tea (80-85°C for green), 6 minutes steeping (±5s), standard porcelain tasting cup with lid (200ml capacity).
While this produces a strong brew (much stronger than consumer brewing), it’s designed for quality assessment - extracting maximum flavor compounds for evaluation. Professional tea tasters worldwide use this method for competition judging, quality control, and purchase decisions.
ISO 1839: Tea - Sampling
Standard method for drawing representative samples from tea lots for testing. Critical for quality assurance in international trade. Specifies sampling plans for different lot sizes, procedures for sampling from various containers, sample preparation methods, and minimum sample sizes for different test types.
ISO 1572: Tea - Determination of Water Extract
Standard method for measuring water-soluble solids content - a key indicator of tea quality. Higher water extract generally indicates better quality and more flavorful tea.
ISO 1573: Tea - Determination of Moisture Content
The reference method for determining moisture content in tea by oven drying at 103°C to constant mass.
ISO 1575: Tea - Determination of Total Ash
Standard gravimetric method for measuring total ash content - an indicator of tea purity and mineral content.
ISO 1578: Tea - Determination of Water-Soluble Ash and Water-Insoluble Ash
Method for measuring the proportion of ash that is water-soluble vs. insoluble. Water-soluble ash is an indicator of tea quality - higher quality teas typically have a higher proportion.

ISO and Food Safety
While ISO sets quality standards, food safety standards (pesticide residues, heavy metals, microbiological limits) are typically set by national regulatory bodies (EU, US FDA, China GB). However, ISO provides standardized testing methods that are referenced by these national standards.
The Codex Alimentarius Commission (joint FAO/WHO body) also sets international food standards including MRLs for pesticides in tea. Codex standards are referenced in WTO trade disputes and increasingly harmonized with ISO testing methods.
How ISO Standards Are Used in Trade
ISO tea standards play a crucial role in international tea commerce: contract specifications reference ISO standards, ISO testing methods provide reference for quality dispute resolution, many countries reference ISO in import regulations, tea auction centers (Colombo, Mombasa, Kolkata) use ISO methods for quality verification, and third-party certification bodies use ISO standards for quality audits.
